Gluten Free Quinoa Tortilla Wraps

Throw anything in your wrap for a quick and easy meal especially left overs. I have recently started making these gluten free, quinoa tortilla wraps. They are flexible as pancakes, easy to prepare and extremely delicious. Recipe Idea thanks to Ground leaf

Yields: 6-7 tortillas   soak: overnight         

Prep Time: 5-10mins


  • 1 cup quinoa, rinsed, soaked overnight 
  • 1 cup water 
  • 1/2 tsp salt 
  • optional: 1 cup spinach


  1. Add all ingredients to blender. Blend until smooth. Pour into a bowl, let rest for 10 minutes. 
  2. Pre-heat non-stick pan over medium-high heat. Use a soup spoon to pour batter into pan. About 1/4 cup. The rounded bottom of the spoon allows you to smooth the batter out better than a measuring cup. 
  3. Spoon 1/4 cup portion of batter onto the pan and immediately smooth out in a large, thin circle. Let heat through until the top of the tortilla is no longer wet batter and the edges start to brown and lift up. 
  4. With a thin metal spatula, carefully flip tortilla. Heat 1-2 additional minutes on second side. Transfer to wire rack or parchment paper while cooking rest of the batter.

  • 1 wrap
  • 1 avocado, mashed or sliced
  • 2 tablespoons cooked black beans
  • A few slices red onions, tomatoes, corn, parsley & a sprinkle of sea salt
  • Juice of half a lime


  1. Spread your sauce at the bottom of the wrap.
  2. Add all your veggies over the sauce in the middle of your wrap.
  3. Wrap up like a burrito and enjoy.
